Can't comment on the ski campsite, but for below freezing Apollo use you will have to plan well. As standard I think they only have a gas heater, and not sure if that's also true for the hot water. So you will either need to a) carry plenty of gas b)have a converter for continental gas cylinders or c)use a fan heater when you're plugged in.
The waste water tank in some campers is heated, but this is unlikely on your Apollo. Use a non-toxic antifreeze. You'll be using the campsite facilities for most things so you should be OK.

I don't think Apollo have much thought to winterising their campers. Will need to be treated as a basic caravan and add lots of insulation to pipes etc.
My Tischer trail is a basic model and the approach to that simplicity gives a few good pointers to winterising. No main internal water tank..it has internal plastic 'jerry can' type things...similarly with the waste storage. This is perfect for winter conditions as nothing is exposed.
