I like the U-bolt around the chassis. Not so keen on the smaller U-bolt that sticks out horizontally through the wheel-arch into the load bed. Strikes me that there could be a lot of force trying to bend that U-bolt upwards. Though I concede it is a lot better than just having that small U-bolt atta...

Maybe you could get some contrasting coloured stitching running across and down the side of the camper - it would then have a sort of puffa-jacket finish.

I can't help on recipes, but Sally cooks a lot of stuff before hand, like curries and ragus and vacuum seals it into bags that she then lays flat and freezes. They then don't take up much room in the camper freezer and just need to be reheated at the campsite.
